The final step in this exceptional rum is a finish in heavily charred American ex-Bourbon casks. This six-month rest allows for a depth of oaky, smoky flavour to develop.

Perfect Serve – Try a Mount Gay Martini. Blend 60mls of Mount Gay Black Barrel with 30mls of Blood Orange Juice and 20mls of sweet Vermouth in a cocktail shaker. Stain into a coupe glass and add four dashes of Angostura Bitters. Garnish with an orange wheel.
